Butternut Squash Soup
Food photography is kind of fun. A lot of work - because you have to think of garnishes to make it look appetizing, and placement of things, and other "props" to add to the photo. But its something different. At least for the next few days.
We had another butternut squash, since I bought two, and I accidentally dropped it on the floor and it cracked. So I had to use it that day. We wanted to try soup with it. Can you tell that Clint is gardening? He loves growing squashes, so he wanted to see if growing butternut squash would be worth it. The fries weren't that great, but the soup was really tasty! And meatless, so therefore cholesterol free. Unless real chicken broth has cholesterol in it. In that case, it might have a little. Plus it's meatless, so it saves money on buying meat.
The recipe for it was super easy! It had some variations to add to the soup, so I added applesauce to the soup with almonds. I was going to caramelize the almonds, but I didn't have time. Cooking everyday is a lot of work. But this is definitely a keeper. And Alexis loved it! I froze some in an ice tray to feed her for later dinners. Jonas loved the rolls more, but he did eat a few spoonfuls of soup when we made him. If there is bread or crackers around, we can always count on Jonas eating that, and only that.
And by the way, the rolls are called "30 minute rolls". They were pretty good, considering it only took me 30 minutes to make them. I still think rolls that take a couple hours to rise and all that work taste better. But I would totally make them again if I didn't have time for others.
And these rolls have cholesterol in them. They have one egg in them. Eggs have a ton of cholesterol in them! 215 mg for one egg. And you're supposed to stay under 300 mg in one day. That's practically all your cholesterol in just one small egg. But I guess that's only 18 mg per roll. Either way, probably not the most heart healthy rolls if you eat a ton of them. Moderation in all things, right?

Love your food pics! I wonder if I can trick your dad into trying this one!...he's not much of a squash fan.
