This past month I have been craving everything I can't have! Real butter, cheese, cookies, pizza. Oh how I want pizza. Not my homemade cheeseless stuff. I want Papa john's pizza, heck I'd even take Little ceasars - as long as it's 3 meat. :) Yum.
And I even tried a few things. I tried eating "I can't believe it's not butter" (at the beginning of the month), which has buttermilk in it by the way, and that week was a disaster with Alexis. And then I ate Jonas's cake, which has buttercream frosting, and that night she had bad gas which caused problems. Yep, she still can't handle dairy- sigh. I'll try again when she's 8 months. Maybe I can enjoy some pizza then.
But until then, there are a few things I have come to realize that are dairy free. Oreos. Practically the only store bought cookie that is dairy free. Cake mixes from the store and store bought frosting (some of them). And I really don't want to try making cookies with my vegan butter and they turn out nasty and all go to waste. Besides, I wouldn't be able to use chocloate chips anyway, so there's no use making cookies if I can't put chocolate in them. I guess I could do snicker doodle, but the thought of vegan butter in cookies just doesn't sound that appetizing. It's not the best butter in the world. It will do for now, but I can't wait to have real butter again. Clint and I did make no bake cookies one day with my almond milk and vegan butter. Clint didn't like them, and therefore I ate them all. Hmm....I can't keep making huge batches of stuff with my ingredients because I'll be the only one eating them.
Then I found this recipe via facebook, that only makes two cupcakes so I tried making it, with my vegan butter and almond milk, and it was pretty good. I'm sure it would have tasted better if I could have used real butter and real milk, but considering I can't, it was a tasty sugar outlet. And I put store bought frosting on them. I'm getting all candied out, so I will most likely make these again when I want baked goods. Try it and let me know if it tastes good with real butter and real milk.

Your cupcakes look delish! I wonder if angel food cake mix has milk in it...that's what's in my "cake in a mug" recipe...just 1 regular cake mix and 1 angel food cake mix. You mix them together and put it in a ziploc bag. Then when you have a craving for something sweet you just take 1 mug, 2 T. water and 3 T mix; mix well and microwave 40 seconds. Hmm...I still have some mix in the pantry! Yum!! Dessert tonight! :)
