I think I'm done with food photography. It's fun and all, but a lot of work, and I haven't taken a picture of Alexis in over a week and a half! What? Needless to say, I didn't try too hard with this pic. I just put it on the plate and took a pic.
So this is the last food post. I still have other recipes I'm making, but I won't be taking pics of them. It's too much work for me. Ha ha!
So these enchiladas were tasty. I would make them again, and Clint even agreed. Here is the recipe. Recipes like this are kind of silly to me. They tell you what brand of food to buy, and I always think do people actually think they have to buy that brand? Maybe. Kind of funny. You can buy whatever brand you want. And I also made homemade enchilada sauce, too. I never have cans of enchilada sauce, but I always have the ingredients to the enchilada sauce recipe. Plus it's cheaper too. By the way, in the sauce recipe, it says to use shortening, but I used Olive oil instead and it worked just great! And I just add all the ingredients together at the beginning and heat it up to thicken it. Easy.
This is heart healthy because it doesn't have meat. The only cholesterol in it is from the cheese, because dairy has cholesterol in it. However, I only used half the cheese that the recipe called for. It's packed with fiber & protein from the black beans and then you have the veggies. Yum!
