This dinner was awesome! I would totally make it again, and Clint even said that as well. And guess what? It was meatless (I prefer that word over vegetarian, ha ha!). Now, the only reason why I looked for meatless meals would be so there's no cholesterol in the meal (minus the small amount of cheese in put inside the burritos). I have nothing against eating meat. In fact, I love it! And so does Clint. He said that if I hadn't told him there was no meat in it, he would have never known.
So here is the yummy burrito. The avacado sauce is so tasty! Spicy, but tasty. Next time I would probably put half the jalepenos. But it also might be because I'm not used to spicy foods since I avoided them for almost 6 months because I felt like it bothered Alexis.
And here is the inside. The sweetness of the sweet potato mix well with the spiciness of the sauce and the black beans. It's so good! And very hearty. And all the spices mix so well together.

From what Clint and I have read about lowering cholesterol, you need foods high in fiber (such as beans), to help flush out the cholesterol that your body naturally makes. So I found lots of recipes with beans in them. Black beans. And I didn't want to buy tons and tons of cans of black beans. That can get expensive if you're paying almost a dollar for every can. So I bought dried blackbeans from the bulk section at Winco. I bought 2 pounds of them. And I found an awesome recipe on how to cook them in my crock pot. The recipe I found is here. That recipe is to die for! I have never tasted such amazing black beans before. I will never buy canned again, unless I'm trying to build up food storage. The black beans cost me $2.38 for a little over 2 pounds and when it was all done cooking, it made this much.
That right there is a little over 6 cans of black beans, so over 12 cups of black beans. I scooped 2 cups out into freezer ziploc bags and froze them. Every can of blackbeans has 2 cups in it, that's why I did 2 cups. So now I have blackbeans to last me a while. And if we're thinking about cans here, I "spent" about .35 or less a can, which is way cheaper than actually buying real cans of blackbeans. Even if you buy a case of them. And did I mention how tasty they are?
So another heart healthy low cholesterol meal a success. Enjoy!
